Tobermory's Tomato Soup Ingredients: Tomatos - a big bag full! olive oil 6 cloves garlic herbs - oregano, rosemary, basil fresh coriander 1-2 teaspoons balsamic vinegar silken tofu (optional)
Method: Chop the tomatos in half, put in a large roasting tray. Pour olive oil over them, add crushed garlic and herbs and black pepper. Roast in the oven or under the grill for 40 minutes, turning every 10 minutes or so, and draining off the liquid into a big pan. Aim to get them slightly blackened. Put everything in the big pan and blend smooth. Add fresh coriander and serve. |
